Szechua Spiced Fish

Ingredients ;

125 gms cold or halibut steak fish

1.tbsp cornflour

1 tbsp lea& Perrins

Worcestershire sauce

1 tbsp sesame oil

1tbsp lime juice

75 ml water

1 tsp sugar

4 tbsos vegetable oil

2 stalks spring onion, sliced

1 tbsp sliced re bell pepper

Here's how to make it:

Dip fish in cornflour. Set aside. Blend sesame oil, lime juice, water and sugar. This will serve as sauce. Heat oil and fry fish until crisp. Drain excess oil off and put sauce over fried fish. Add sliced spring onion and red bell pepper; simmer in 2 minutes more then serve with boiled fragrant rice.




PARMESA BOILED FISH




Ingredients:

2 lbs fish fillet, skinned

2 tbsps lemon juice

1/2 cup grated Parmesan cheese

1/4 cup margarine, softened

3 tbsps mayonnaise

3 tbsps chopped green onion

1/4 tsp salt

dash of hot sauce

Here's how to make it:

Place fillet in a single layer on well-greased baking platter. Brush fish with lemon juice. Let stand for a while. Combine remaining ingredients well. Broil fillet 4 to 6 minutes or until fish flakes easily. Remove from the heat and spread cheese mixture on fish fillet. Broil 2 to 3 minutes more or until light brown.

PEPPERY CRAB OMELET




12 pcs medium size alimasag ( Crab ) washed well
1/2 cup cooking oil
4 cloves garlic, minced
2 medium size onion, finely chopped
3 large tomato, finely chopped
salt and pepper
6 eggs, cooked scrambled
1kg Baguio beans, cooked in butter
4 pcs big red bell pepper, cut into big rings.


Here's how to make it:


1. Steam crab and separate meat from shell ( Don't break the shell) set aside

2. Heat oil in a pan and saute garlic and onion until brown.

3. Add Tomato, then after a while add crab meat, salt and pepper; let it cool.

4. Stuff meat mixture into shell and top with scrambled egg . Arrange crab shell on serving dish and garnish with butter beans and red bell pepper rings on top.

SOUP TALANGKA




INGREDIENTS:


30 pieces talangka (small crabs)
4 cups water or
4 cups stck
3 tbsps. cooking oil
1 tbsp.slice onion
1/2 cups sliced tomatoes
fish sauce to taste (patis)
5 pcs. kamias fruit
1/2 kilo fresh miki noodles
spring onions and kintsay chopped, for garnishing

Rinse the talangka. Remove some of its meat..Set a side. Place the rest in a pestle and pound until fine. Pour water, stir a little and strain. Set aside.

Pour stock in a pot and allow to boil. Scoop out whatever impurities that may appear.

In a separate pot, Saute onions, tomatoes and some crab meat. Season with patis and add to the soup stock.

Add the kamias until tender. Remove the kamias from the stock, mix with a little stock and mash. Strain and return to the pot. allow the soup to boil before adding miki noodles. Cook for 3-4 minutes. garnish with spring onions or kintsay prior to serving.

CRAB WITH GARLIC SAUCE


Ingredients :
 2 large crabs

 For the Sauce:
 1 cup softened butter
 1 head garlic, crushed
 1 tsp hot sauce
 Pepper to taste Salt to taste
 Worcestershire sauce

 Here’s how to make it:
 1. Remove the outer shell of the crabs and place at the bottom of a microwaveable dish.
 2. Halve the crab and place on top the shells. 3. Meanwhile, mix all the ingredients of the sauce.
 4. Top the crabs with the sauce. Cover with a microwaveable wrap.
 5. Microwave on high temperature for 15 minutes.

 One of the Filipino best food and one of my favorite. Mostly prepare during special occasion. Make a try of this one and enjoy the good taste of Filipino cuisine !!!!

Pepper Steak


Ingredients;
 3 tbsps. Freshly ground pepper corn
 1 kilo steak, cut into
 2-inch thick slices
 ½ cup cooking oil
 ½ cup parsley, minced
 1 cup hot water
 3 tbsps Worcestershire sauce

 Here’s how to make it;

 1. Rub or press the peppercorns onto the steak.
 2. In a skillet, heat oil and brown both sides of the steak very quickly. Cook to desired denseness ( rare, medium-done, well-done ).
 3. Place the steak on a serving platter but keep warm.
 4. Meanwhile, combine the hot water, Worcestershire sauce and parsley in a saucepan. Heat for a few minutes and serve over the steak.

FISH FLORENTINE


12 pcs lapu-lapu fillet water 4 pcs calamansi salt and pepper WHITE SAUCE: red bell pepper,finely chopped green bell pepper,finely chopped 1/2 kilo shrimp, shelled and chopped 2 tbsps cornstarch GARNISH: hard-boiled egg,sliced and chopped 1 kilo potato,cooked and mashed leek curls Cut fish into thin slices and roll.Boil water with calamansi,salt and pepper.Drop fish and continue cooking for a few minutes until done. SET ASIDE Prepare white sauce:use water in which fish had been cooked.Let boil and add red and green bell pepper .Add shrimp ,then thicken sauce with cornstarch.Immediately before serving,pour sauce on top of fish.Garnish with hard-boiled egg,mashed potato and leek curls.
